SPRING & ST. GEORGE 2011

We decided to get away from the rain and cold a couple of weeks ago so we headed down to one of my favorite places..... St. George. It was a short trip of swimming, golf and LDS General Conference. We had a great time and great weather, more importantly we had great food; Sawyer was in love with the fried chicken at Chuckarama and Pops continued his love affair with Toms Deli! The golf courses were beautiful as was the scenery. There just isnt a better place to get away from the cold wet spring weather than St. George!

Nana had her annual Easter egg hunt over at her and pops' house it was good times and the kids love it! We got there and turned the kids loose in the backyard for the hunt.

It was a fun Saturday.....BYU basketball is over, football hasnt started yet, the Jazz didnt make the playoffs, and its still too cold to golf, the girls are loving life!!!

To switch subjects a little bit, Halle had her ears worked on again......she is a real trooper she just goes with it and although she's scared at times she looks forward to the popsicles and ice cream when its all said and done. It's a little bit exciting because she can now hear her teacher at school! Hallelujah! I think her teacher was getting a little nervous knowing that she might have to talk into a microphone in her class.....haha oh well, we just hope that Halles ears get better and stay better! We are lucky though it could be worse!

One more note for the spring so far. When we got home from St. George Sawyer must have thought his skin was really dry because he loved the Vaseline.

We were wondering why it was so quiet in his room!

I've been so blessed to find someone who puts up with my faults and imperfections, loves me unconditionally and makes me laugh. I don't know where I came across this recipe, but I definitely need to sharpen my "cooking" skills! I thought this would be fun to share on Valentines. Love you babe!

Recipe For A Happy Marriage

1 cup consideration
1 cup courtesy
2 cups flattery carefully concealed
1 gallon faith and trust in each other
2 cupfuls of praise
1 small pinch of in-laws
1 reasonable budget, a generous dash of cooperation
3 tsp pure extract of "I'm sorry"
1 cup contentment
1 cup confidence
1 large or several small hobbies
1 cup blindness to others faults

Flavor with frequent portions of recreation and a dash of happy memories. Stir well and remove any specks of jealousy, temper or criticism. Sweeten well with generous portions of love and keep warm with a steady flame of romance! Never serve with a cold shoulder. Enjoy!

March 14th was Sawyer boy's 2nd birthday- I can't believe he has been a part of our family this long! Time flies! He had a great time.

Two weeks ago it was Nick and my Anniversary. I couldn't be luckier!

Nick is a great dad.
He still makes me laugh.
He lets me sleep in without making me feel guilty.
He writes me notes on the bathroom mirror with soap.
He makes me feel beautiful.
He knows what it means to "lose a ruffled shirt".

December 6th was Halle's 5 year birthday! We had a nice little evening at home. For dinner, we had Halle's favorite- pancakes!

Then we went to Nana and Pops to open presents, with the cousins.

Halle is a tiny little ball of a TON of energy. She keeps us on our toes and is constantly making us smile. She is a great big sister. She is very smart and loves school.

She is 3 feet 3 inches

She weighs 35.2 pounds

Her favorite books are: If You Give A Mouse A Cookie, No! No! David, and The Gingerbread Man

Some of her favorite things: stickers, books, tape and purses.

She loves going with her dad to "take the dogs on a run" and helping her mom in the kitchen! She is a great helper!

I have a great, hardworking hubby, who's a wonderful father and companion.....

This little curly haired fireball, is a sweetheart, a great big sister and mommy's big helper! She loves helping me in the kitchen!

This little boy I just want to gobble up. He is so cuddly, sweet and very observant. Loves to give hugs and kisses.

Nick had to go to Texas for work last week, and I got to go with him! We went to the Dallas Cowboys game, walked all around downtown Dallas to find the BYU game, (we found it eventually) and watched football in the hotel room.... needless to say it was a great trip!

I'm trying to create more family traditions for our little fam. (Start 'em young right?) So, the last two years we have made it a point to carve "punkins." The kids usually last about 15 minutes or so, and then Dad finishes everything up. He did a great job!

I have this secret obsession with the quirky, sarcastic, music- obsessed mom and daughter duo the Gilmore Girls. I want all of the seasons of this timeless show, but don't want to pay for it! So in my endless searching of trying to achieve that, I found this website: edogo.com. It says you can download Gilmore Girls for free. I'm just a little nervous to do it- Nick thinks I'm gonna get us a "virus." What do you think? Legit?

Being the thoughtful wife I am, I thought this little guy would be a great Father's day present! (I think I got confused with Mother's Day or something:) Anyways, we decided having another dog in the fam wasn't in our "best interest" right now. So after a day we said goodbye to the little guy- broke my heart:( No worries though- for $75 dollars we found him a good home!

So Mariel and I took the girls to see Disney on Ice in Salt Lake. I think we were more excited than they were at first! It was fun, they dressed up in their "princess" garb. We saw the Lion King, Little Mermaid, Peter Pan, Lilo and Stitch, and Mickey and the gang! We had a good time. Afterwards we went out to dinner. Thanks for the fun ladies!

Saturday was Sawyer's first birthday. We had a little get together at our house on Sunday. Of course he really didn't know what was going on, but we all had fun!

Poor Thing!

Last Tuesday, we took Halle to get her tonsils and adnoids out, and tubes put in her ears. We finally decided to do it after taking her to an ENT. Her hearing hadn't been very good for a long time. She was constantly turning everything up loud and asking us to repeat ourselves. I was kinda scared but knew it would help her in the long run. It's been a rough week and the poor thing has been in a lot of pain, but she told us the other night "Daddy the music is too loud!"

The best thing about it is all the popsicles, ice cream and jello!

So this will be one of the very few dessert recipes I will be posting. Baking is in no way by any means my forte but I can make a mean creme brulee! It is a very simple recipe and a sure crowd pleaser! (Nick and Halle)

Preheat your oven to 375

Mix 9 egg yolks and 1 cup of sugar together with a whisk.

Scald 1 quart of heavy cream. (when bubbles come up to the sides it's scalding) Stir constantly.

Gradually add scalded cream to yolk mixture stirring constantly.

Add 31/2 tsp vanilla. This is just too hard....

Mash up raspberries and distribute evenly into ramekins. (my husband personally likes it better when I don't put the raspberries in... it's up to you) Put the ramekins into baking dishes.

Pour mixture into ramekins and then make a water bath by pouring water into the baking dishes about half way up to the ramekins.

Put the finished product into 375 degree oven for 35 to 45 min or until they don't jiggle like your thighs when you are done eating this! When they are done baking take them out of the water bath and let them cool. Then put them in the fridge for at least 3 hours...I think overnight is best.

When you are ready to serve it put a generous amount of sugar on the top and burn it with a special torch (you can buy them at any kitchen or hardware store) or broil them in the oven. It just won't be as even. Enjoy!

Jessica's Creme Brulee

1 Quart heavy cream

1 cup sugar

9 egg yolks

31/2 tsp. vanilla or 2 vailla beans

Mix sugar and yolks together. Scald the cream. Gradually add scalded cream to yolk mixture, stirring constantly. Add Vanilla. Pour into ramekins. Place in a water bath and bake for approximately 45 min at 375 degrees. Enjoy!

January 5th was Nick and I's seven year anniversary! We are pretty proud of ourselves. We passed pretty much everyone in Hollywood now except for a choice few....Tim and Faith, John Travolta and Kelly Preston, Kurt and Goldie....wait they never tied the knot. Anyways. I took Nick to dinner at Tepanyaki (we almost didn't make it because it snowed like 10 inches that day) where they cook the food in front of you. So yummy! And just like our wedding day it was freezing cold. But it was totally worth it honey!! Love you!

So the Salmons (Jessica) finally got a computer for Christmas! I can now feel apart of the 'cyberworld' and not be a loser. I have no clue what Im doing whatsoever so this will be a good challenge for me. I think mom and dad were more excited for Christmas this year than the kids! Dad not so excited about putting toys together but so worth it on Christmas morning! Between Halle's birthday on the 6th and Christmas she needs nothing for the next few years!

Luckily November and December were both busy months so I have a lot to blog about and my 'readers' wont be bored. (Hopefully!) Slick Nick and "the boys" went pheasant hunting in Nebraska for a few days and came home with a truckload of birds. Since I dont really know how to cook pheasant- or really care to, Nick took all of the birds to the Mandarin where I work and gave them to one of the chinese cooks who LOVES them. Hence his new bff. Nicks other bff went with him pheasant hunting and they had a blast!
